Ingredients
  

  • 1 cup old-fashioned oats
  • 1/2 cup natural peanut butter creamy or crunchy
  • 1/3 cup honey or maple syrup
  • 1/4 cup mini chocolate chips
  • 1/4 cup ground flaxseed optional, for added fiber
  • 1/2 tsp vanilla extract
  • Pinch of salt

Method
 

Mix ingredients
  1. In a large bowl, stir together oats, peanut butter, maple syrup, vanilla, flaxseed (if using), and salt.
Add chocolate chips
  1. Fold them in last to prevent melting.
Chill the mixture
  1. Refrigerate for 15–30 minutes to make it easier to roll.
Roll into balls
  1. Use a cookie scoop or tablespoon to form 1-inch balls.

Keep in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
