Healthy Beef Ramen Noodles Stir Fry

This delicious, healthy beef ramen noodle stir fry uses a few simple ingredients to create a frugal dish, the whole family will devour!

Ingredients
  

  • 1 tbsp cooking oil
  • 1 lb ground beef (I precook mine and freeze it, making this an even quicker dish)
  • 1 bag stir fry vegetables (any kind you like)
  • 3-4 packets ramen noodles (discard the seasoning packets)
  • Salt & Pepper (to taste)
Sauce
  • 1/2 cup soy sauce (sodium free)
  • 2 tbsp brown sugar
  • 2 tbsp apple cider vinegar
  • 3 tbsp minced garlic
  • 2 tbsp sweet chili sauce (optional, can also top bowl instead)

  • Large Skillet

Method
 

  1. In a large skillet over medium heat, heat oil.
  2. Add stir fry mix and cook until tender, about 5 minutes.
  3. If you precook your ground beef, skip this step. Remove veggies from the pan. Add ground beef, season with salt and pepper, and cook until no longer pink, 5 minutes more. Drain fat and return vegetables back to the skillet.
  4. Make sauce: Whisk together soy sauce, brown sugar, apple cider vinegar, chili sauce (optional), and garlic.
  5. In a separate saucepan, bring water to a boil. Add ramen noodles and cook until tender, about 2 minutes.
  6. Drain noodles, then add to the veggie and beef skillet.
  7. Pour sauce over your veggie, noodles, & beef.
  8. Toss until completely combined.
  9. Taste and season with more salt and pepper, if necessary.
