First, heat your griddle to about 350 degrees F. Spray your griddle with cooking spray to avoid sticking. Once your griddle is hot, grab a large bowl. Add the amount of cups of pancake mix you want to make. For this recipe, I am using 3 cups. Next, add your cocoa powder, sugar, and cinnamon. Mix together.
After that, add your water. Start with 2 1/2 cups, but I always have to add more. I usually do closer to 3 cups. It should be thinner than cake mix.
Next, pour about 1/4 cup of batter onto your preheated griddle. Cook your pancakes about 1-2 minutes per side. Only flip once.
Once your pancakes are cooked, move to a plate to cool. Then, add your toppings.**
