First, you're going to cook up your ground sausage.
While that is cooking, add your ghee or butter to a stock pot over medium, high heat. Next, add onions, garlic, and seasonings. Let that cook up for a few minutes.
Then, add your coconut or regular milk and chicken broth to the stock pot. Finally, add your potatoes.
Once your ground sausage is no longer pink, add it to your soup.
Cook until your potatoes are fork tender. About 20 minutes.
Add your spinach or kale and allow to wilt before serving.
Top each bowl with parmesan cheese.
