How to Make Hoosier Stew: Green Beans, Sausage, and Potatoes

Ingredients
  

  • 2 cans green beans (we like cut or French style)
  • 3 large potatoes or 6 medium potatoes
  • 12-16 oz of smoked sausage (we get whatever is on sale)
  • slow cooker or stock pot **see notes for crockpot instructions
  • salt, pepper, onion powder OR Cajun seasoning

Method
 

  1. Dump cans of green beans into stock pot, including the water. You can drain and add your own cans of water or sub with chicken broth, but we just dump right in.
  2. Scrub and peel potatoes. Dice potatoes and add to stock pot.
  3. Cut sausage. We cut small enough to prevent choking hazard for our kids.
  4. Place lid on stock pot.
  5. Let sit on medium heat until potatoes are fork tender, about 20-25 minutes.
  6. Start cornbread if making
  7. Once finished, add salt, pepper, and onion powder OR Cajun seasoning

Notes

Slow Cooker Directions:

The directions are the same, the only difference is you'll want to throw all the ingredients into the slow cooker. Cook on high for 2-3 hours or low for 4-6 hours. Make sure to mix often, as the potatoes and sausage can tend to burn.

Hoosier Stew Variations:

You can substitute the sausage for leftover ham. You can also add corn to your Hoosier stew. We love ours with Cajun seasoning and cornbread
