How to Make Loaded Potato Soup in the Slow Cooker

Ingredients
  

  • Real bacon pieces I buy mine in the pouch and keep in the freezer, but you can use 6 real strips of bacon & make your own
  • 3 tbsp butter
  • 1 medium yellow onion chopped
  • 3 tbsp minced garlic
  • 1/3 cup all purpose flour
  • 2.5 lbs of potatoes
  • 4 cups chicken broth
  • 2 cups milk
  • 2/3 cups heavy cream
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 2/3 cup sour cream
  • 1 cup shredded cheese
  • additional cheese sour cream, chives, bacon for topping

Method
 

  1. First, you will add onion, chopped potatoes, garlic, and chicken broth into your slow cooker.
  2. Cook on High for 4-6 hours or low for 6-8 hours.
Once your potatoes are fork tender, in a saucepan:
  1. Melt your butter
  2. Whisk in your flour
  3. Cook these for 1 minute
  4. Then, stir in your milk
  5. Cook for a few more Minutes
Pour your sauce mixture in your slow cooker.
  1. Also add your cheese, sour cream, salt, and pepper.
  2. Finally, you can blend 1/3 of your soup or simply mash some of the potatoes.
  3. Top with additional cheese, chives, sour cream, or bacon piece
