Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning or 2 Tbsp homemade
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can corn, drained
  • 1 10 oz can diced tomatoes with green chilies (like Rotel), undrained
  • 2 cups sharp cheddar cheese shredded
  • 3 –4 cups Chili Cheese or regular Fritos corn chips

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Stir in the taco seasoning and the can of diced tomatoes with green chilies (including liquid). Simmer for 2–3 minutes.
  4. Add black beans and corn to the skillet. Stir to combine and heat through.
  5. In a greased 9x13-inch baking dish, spread a layer of Chili Cheese Fritos across the bottom (reserve about 1 cup for topping).
  6. Spoon the beef mixture over the chips.
  7. Sprinkle shredded cheddar cheese evenly over the top.
  8. Top with the remaining Fritos.
  9. Bake uncovered for 15–20 minutes, or until the cheese is melted and bubbly.
  10. Let sit for 5 minutes before serving.
