Preheat the oven to 400 degrees F
Line a rimmed baking sheet with parchment paper or a silicone mat Peel the carrots and slice off the tops and bottoms
Cut the carrots in half lengthwise, then slice them in half crosswise and cut each piece lengthwise into thirds
Each carrot fry should be about 3 inches long by 1/2 inch thick
Place the carrots, oil, and salt on the lined baking sheet and toss to coat
Bake for 30 minutes, flipping halfway through
When the carrots are slightly wrinkled and browned, remove from the oven
