Chicken Pot Pie with Cheddar Bay Biscuits

A delicious, easy chicken pot pie recipe using Red Lobster's famous and yummy cheddar bay biscuits! Most of the ingredients you likely have on hand, so this also makes for a very budget friendly meal!
Cook Time 40 minutes

Ingredients
  

  • 1 stick melted butter
  • 1 box Red Lobster Cheddar Bay Biscuits (don't lose the packet)
  • 4-5 cups cooked, shredded chicken
  • 1 can cream of chicken soup
  • 2 cups chicken broth
  • 1 cup cheddar cheese
  • 1 bag frozen mixed vegetables
  • 2 cups milk
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp parsley

Equipment

  • 9x13 baking dish
  • Mixing Bowls
  • Wisk

Method
 

  1. Preheat your oven to 400 degrees F
  2. Spray your 9x13 baking dish with non stick cooking spray
  3. Add your melted butter to the bottom of the dish
  4. Add your cooked, shredded chicken on top of the butter and season with salt, pepper, and parsley
  5. Top the chicken with the bag of frozen vegetables
  6. In a bowl, combine the biscuit mix, cheese, and milk
  7. Pour over the contents in the baking dish. DO NOT MIX
  8. Combine the seasoning packet, chicken broth, and cream of chicken soup.
  9. Pour those contents in the baking dish and again, DO NOT MIX
  10. Place the dish in the oven for 35-40 minutes
  11. Remove from oven and allow to sit for 15 minutes
