This is a super simple, budget friendly dinner idea using to cheddar bay biscuits. My family is not super keep on chicken pot pie. In the past when I’ve made it, they weren’t very impressed. One thing we can all agree on though is Red Lobster’s cheddar bay biscuits. Once I saw this recipe, I knew we had to give it a try!

The most important step in this recipe is NOT MIXING once you have your ingredients in the dish.

Here’s what you’ll need!

  • 9×13 baking dish
  • Mixing Bowls
  • Wisk
  • 1 stick melted butter
  • 1 box Red Lobster Cheddar Bay Biscuits (don't lose the packet)
  • 4-5 cups cooked, shredded chicken
  • 1 can cream of chicken soup
  • 2 cups chicken broth
  • 1 cup cheddar cheese
  • 1 bag frozen mixed vegetables
  • 2 cups milk
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp parsley

How to Make Cheddar Bay Biscuit Chicken Pot Pie

  • Preheat your oven to 400 degrees F
  • Spray your 9×13 baking dish with non stick cooking spray
  • Add your melted butter to the bottom of the dish
  • Add your cooked, shredded chicken on top of the butter and season with salt, pepper, and parsley
  • Top the chicken with the bag of frozen vegetables
  • In a bowl, combine the biscuit mix, cheese, and milk
  • Pour over the contents in the baking dish. DO NOT MIX
  • Combine the seasoning packet, chicken broth, and cream of chicken soup.
  • Pour those contents in the baking dish and again, DO NOT MIX
  • Place the dish in the oven for 35-40 minutes
  • Remove from oven and allow to sit for 15 minutes

What chicken do I use?

A lot of people use rotisserie chicken in their recipes. I simply made my chicken in the instant pot.

  • First, I sprayed my IP
  • Then, I added 1 cup of water to the bottom of my IP
  • Next, I placed my frozen chicken breasts in.
  • Finally, I seasoned with garlic, onion, salt, and pepper.
  • I set my IP on high pressure for 25 minutes. Then, let it naturally release for 10 minutes and then release the pressure.
  • Finally, I shred my chicken with my hand mixer.

Most of these ingredients are pantry staples. I pretty much always have cheese, butter, cream of chicken soup, and milk on hand. The only thing I needed to purchase was the biscuit mix and the vegetables. Assuming you had most ingredients on hand, this could easily be a $5 or less dinner!

Beyond easy! The hardest part of this recipe is shredding the chicken. Everything else is simply thrown in the dish!

    1. That would probably be important, wouldn’t it?! haha I fixed it, but about 4-5 cups of shredded, cooked chicken. I had a leftover chicken breast, so probably only 2-3 cups and it worked just fine as well!
