How to Make Buffalo Chicken Stuffed Avocados

Ingredients
  

  • 2 large chicken breasts
  • 1 cup of buffalo sauce
  • 4 medium avocados
  • ranch for topping

Method
 

Slow Cooker Buffalo Chicken
  1. First, you will be putting your chicken breasts and buffalo sauce in your slow cooker.
  2. Cook on high for 4-6 hours or low for 6-8 hours.
  3. Once your chicken is cooked through, shred with a fork or with your hand mixer.
Making the Stuffed Avocados
  1. Next, preheat the oven for 400 degrees F.
  2. Halve the avocados and remove the pits.
  3. Then, slice 1/4 inch off of the bottom of each avocado to make a flat surface for the avocado to sit on.
  4. Place the avocados on a silicone mat on your baking sheet.
  5. Stuff each avocado with an equal amount of the chicken mixture.
  6. Bake the stuffed avocados for 15 minutes or until the chicken is slightly browned on top.
  7. Let cool and serve!
  8. We love topping ours with ranch!

Notes

**If you already have cooked chicken, you can always just mix in the buffalo sauce and top the avocados, making it an even easier meal!
