Homemade Zuppa Toscana Soup- Your New Favorite Comfort Dish
We absolutely love Zuppa Toscana Soup! Back before our debt free journey, we would frequent Olive Garden for their soup, salad, and breadsticks, just for this delicious, hearty dish! When we started watching our spending, we wanted to recreate a lot of our favorite dishes. This is a homemade Zuppa recipe I have been using for years. I can’t even tell you where it originated because I scribbled it down. It’s also a tad bit healthier, if that’s what you’re needing! Here’s how to make homemade Zuppa Toscana!
Gather Your Ingredients
- 1lb Italian sausage
- 1 tbsp minced garlic
- 1 medium onion, diced
- 7 medium potatoes
- 32 oz of chicken broth
- 1 tbsp Italian seasoning
- 1 tsp sea salt
- pepper to taste
- 2 tbsp of ghee or butter
- 1 cup frozen spinach or kale
- 1 can of coconut milk or 1 cup of milk
- Parmesan cheese to serve, optional
How to Make Homemade Zuppa Toscana Soup
First, you’re going to cook up your ground sausage.
While that is cooking, add your ghee or butter to a stock pot over medium, high heat.
Next, add onions, garlic, and seasonings. Let that cook up for a few minutes.
Then, add your coconut or regular milk and chicken broth to the stock pot.
Finally, add your potatoes.
Once your ground sausage is no longer pink, add it to your soup.
Cook until your potatoes are fork tender. About 20 minutes.
Add your spinach or kale and allow to wilt before serving.
Top each bowl with parmesan cheese.
