Adding this healthy beef ramen noodles stir fry to our meal plan every now and then is one way that helps. It’s even better that it’s so darn delicious. We rarely have leftovers for this meal.

Should I add hot sauce?
I am not a hot sauce gal. Some people like their Asian food with a zing, like my husband. He will add hot sauce to just about anything. I, on the other hand, do not enjoy spicy food in the least. That is why, when I make this recipe for myself and my children, I like to add a sweet Asian sauce. We were recently gifted some Melinda’s sauces for Christmas, and while I don’t like to push products on people, especially being a frugal living blogger, I have to tell you, this is a sweet chili sauce that is absolutely delicious! My husband added it to his bowl and before you know it, we all added it. Now, we incorporate it as part of the recipe. I hope you enjoy the sauce as much as we do!
What you need:
- 1 tbsp cooking oil
- 1 lb ground beef (I precook mine and freeze it, making this an even quicker dish)
- 1 bag stir fry vegetables (any kind you like)
- 3-4 packets ramen noodles (discard the seasoning packets)
- Salt & Pepper (to taste)
Sauce
- 1/2 cup soy sauce (sodium free)
- 2 tbsp brown sugar
- 2 tbsp apple cider vinegar
- 3 tbsp minced garlic
- 2 tbsp sweet chili sauce (optional, can also top bowl instead)
How to make Healthy Beef Ramen Noodles Stir Fry:
- In a large skillet over medium heat, heat oil.
- Add stir fry mix and cook until tender, about 5 minutes.
- If you precook your ground beef, skip this step. Remove veggies from the pan. Add ground beef, season with salt and pepper, and cook until no longer pink, 5 minutes more. Drain fat and return vegetables back to the skillet.
- Make sauce: Whisk together soy sauce, brown sugar, apple cider vinegar, chili sauce (optional), and garlic.
- In a separate saucepan, bring water to a boil. Add ramen noodles and cook until tender, about 2 minutes.
- Drain noodles, then add to the veggie and beef skillet.
- Pour sauce over your veggie, noodles, & beef.
- Toss until completely combined.
- Taste and season with more salt and pepper, if necessary.
