These easy blueberry muffins are so moist, delicious, and quick to whip up! These are so good, that your husband will question if you bought a box mix!
I have had a hankering for muffins lately. Maybe it’s all the Cottagecore things I pin on pinterest. I’m not sure, but when I saw that Aldi had blueberries on sale, I knew I needed to add blueberry muffins to my meal plan! I was hoping to be making sourdough discard muffins by now, but I digress.
These are so simple, easy, and delicious! They’re such a fun treat for the children and I for snacks or breakfasts. My husband is always so surprised when I make homemade baked goods. He swears they’re store bought or I that I used a mix. Nope! Just a few pantry staples are needed to make these amazing, easy blueberry muffins!

What You’ll Need:
- 1 Mixing Bowl
- 1 whisk
- 1 muffin tin
- 12 muffin liners
- 1 mixing spoon
Ingredients:
- 1 1/2 cups flour
- 3/4 cup granulated sugar (and extra for topping)
- 1/2 tsp salt
- 2 tsp baking powder
- 4 tbsp melted butter (or 1/3 cup oil)
- 1 large egg
- 1/2 cup milk
- 1 1/2 tsp vanilla
- 1 cup fresh blueberries
Instructions:
- Preheat oven to 400º F
- In a large bowl whisk flour, sugar, baking powder and salt
- Next, mix in your wet ingredients (egg, vanilla, milk, and butter (or oil))
- Gently fold in the blueberries
- If the batter is too thick to mix, add a tiny bit more milk
- Fill muffin liners to 1/2 full (I use my cookie scoop to make it easier)
- Sprinkle sugar to top
- Cook 15-20 minutes
- Allow to cool completely before removing muffin liner
