These easy blueberry muffins are so moist, delicious, and quick to whip up! These are so good, that your husband will question if you bought a box mix!

I have had a hankering for muffins lately. Maybe it’s all the Cottagecore things I pin on pinterest. I’m not sure, but when I saw that Aldi had blueberries on sale, I knew I needed to add blueberry muffins to my meal plan! I was hoping to be making sourdough discard muffins by now, but I digress.

These are so simple, easy, and delicious! They’re such a fun treat for the children and I for snacks or breakfasts. My husband is always so surprised when I make homemade baked goods. He swears they’re store bought or I that I used a mix. Nope! Just a few pantry staples are needed to make these amazing, easy blueberry muffins!

Yes! You don’t even need to thaw them. Toss frozen blueberries in some flour to coat and prevent sticking and sinking to the bottom of the muffins. Then use blueberries following the directions. Baking time may differ, when using frozen blueberries, muffins need to be baked for about 5 minutes longer.

Muffins can be made with either water or milk, but most recipes call for milk. Milk adds richness and flavor to muffins, while water may result in a slightly less flavorful and less tender texture.

Most people will say oil works better in muffins. However; I don’t usually keep vegetable oil on hand, so I started using butter. I’ve never had any issues. In the recipe, I mention using oil in place of butter if that’s what you prefer!

Muffin batter should be thicker than pancake batter but looser than cookie dough. It should fall off the spoon in clumps. If it’s too hard to mix with a spoon, I add a tiny bit of milk until I can stir it up.

  • 12 muffin liners
  • 1 mixing spoon

Ingredients:

  • 1 1/2 cups flour
  • 3/4 cup granulated sugar (and extra for topping)
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 4 tbsp melted butter (or 1/3 cup oil)
  • 1 large egg
  • 1/2 cup milk
  • 1 1/2 tsp vanilla
  • 1 cup fresh blueberries

Instructions:

  • Preheat oven to 400º F
  • In a large bowl whisk flour, sugar, baking powder and salt
  • Next, mix in your wet ingredients (egg, vanilla, milk, and butter (or oil))
  • Gently fold in the blueberries
  • If the batter is too thick to mix, add a tiny bit more milk
  • Fill muffin liners to 1/2 full (I use my cookie scoop to make it easier)
  • Sprinkle sugar to top
  • Cook 15-20 minutes
  • Allow to cool completely before removing muffin liner
