A Simple Recipe for Irresistibly Fluffy Homemade Cornbread
Growing up in the Midwest, I never remember eating any other type of cornbread other than boxed Jiffy. I also don’t remember eating it in slices, only in muffin form. This makes it so easy to make individual servings for everyone and leftovers are a breeze!
Today, I want to share a simple, homemade jiffy cornbread recipe I have been using for years. You can make it ahead of time, make a big batch, and store it in a jar or gallon size bag. However; it’s so simple, I just throw it together while my oven preheats. My whole family love it and it’s perfect every time!
Gather Your Ingredients:
- 2/3 cup flour
- 1/2 cup yellow cornmeal
- 3 tbsp sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 egg
- 2/3 cup milk
- 2 tbsp vegetable oil
- reusable cupcake liners
- muffin tin

How to Make Homemade Jiffy Cornbread
Preheat oven to 400 degrees F while you prepare the mix.
Then, combine your dry ingredients together, which are the flour, cornmeal, sugar, baking powder, and salt.
If you’d like to keep the mix on hand, you can store it in a jar or gallon size bag and add the wet ingredients when you’re ready, but I just always make mine as my oven preheats. It’s super simple!
Next, add your wet ingredients to the dry ingredients, which is the milk, egg, and vegetable oil. Then, you will mix them all together.
Place your cupcake liners in your muffin tin and fill each cupcake liner about 1/2 or 3/4 full. I usually do 3/4 full, but it depends on how many muffins you need.
Bake in the oven for 15-20 minutes. I usually do about 17 minutes and they’re perfect in my oven every time!
